There is a moment in every poached-fish recipe where it goes wrong, and it is almost always the same moment. The liquid looks calm, you slide the fillets in, you turn away for a minute to find a plate, and when you come back the pot is bubbling properly and the fish has gone from four neat pieces to something you will be serving with a spoon.
Nobody set out to boil it. The pot just got away.
The short version: water does the same job at four different speeds, and the speed you want is almost always slower than the one you have. What separates poaching from simmering from boiling is not really temperature. It is how violently the water is moving — and you can see that from across the kitchen.
The four states, and what each one looks like
You do not need a thermometer in the water for this. You need to look at the surface.

Two things are worth noticing. The first is how narrow the whole range is — from a bare poach to a full boil is about fifty degrees, and it is the last thirty of them that most recipes are fighting over. The second is that you can tell these apart by eye in about a second, which is exactly why a well-written recipe describes the surface of the liquid instead of giving you a number on a dial.
The damage is mechanical, not thermal
This is the part that usually gets left out, and it explains nearly everything else.
When a piece of cod falls apart in the pot, it is tempting to blame the heat. But the gap between 180°F and 212°F is not enough on its own to destroy the structure of a fillet. Plenty of fish is cooked in a 400°F oven and comes out perfectly intact. What breaks it up is the water moving.
A rolling boil is a surprisingly violent place. Bubbles form on the base of the pan, tear upward through the liquid and drag currents along behind them. Anything fragile suspended in that is being knocked about continuously. And cooked fish is fragile almost by definition: the thin connective tissue holding the muscle blocks together softens and releases as it cooks, which is precisely what people mean when they say fish flakes. Once it has released, agitation is all it takes to separate the flakes for you.
So the rule is not cooler water for delicate things. It is stiller water for delicate things.
Eggs make the same case from the other direction. An egg slipped into gently moving water spreads into rags and streamers. The same egg in genuinely still water holds itself together long enough for the outside of the white to set around the rest of it. Nothing about the temperature changed.
Why proteins prefer a slow approach
Protein does not cook at a temperature. It cooks across a range. Egg white starts to set somewhere around 145°F and goes on firming up toward 180°F. Yolk begins to thicken around 150°F and sets at roughly 158°F, which is the whole reason a soft yolk and a firm white can exist in the same egg at the same time. Fish is done at 145°F.
Now put a fillet in liquid held at 175°F. The outside of that fillet can never get hotter than 175°F, no matter how long you leave it, so the whole piece drifts gently toward the same doneness and there is very little difference between the edge and the center.
Put the same fillet into a rolling boil and the outside sits at 212°F while the middle is still climbing. The outer layer overshoots badly while you wait for the center to catch up, and overcooked muscle fiber contracts and squeezes out the water it was holding. That squeezing is dry fish. It is not a separate failure — it is the same failure. Poaching does not fix the gap between outside and inside; it removes the gap.
The same logic runs through dried beans. At a bare simmer they hydrate and soften and hold their shape. At a boil the skins split and the outsides turn to mush before the centers are done, and you end up with a pot that is somehow both underdone and falling apart.
Holding a bare simmer on a real stove
Reaching a poach is easy. Staying there is the hard part, and it is where most home stoves fight you.
- The pan is a flywheel. A heavy pot full of liquid holds a great deal of stored heat, so turning the dial down does almost nothing for a minute or two and then does everything at once. Make your adjustment and wait before judging it.
- Wide and shallow beats tall and narrow. A wide pan loses heat from a bigger surface, which makes low temperatures easier to hold, and it lets you lay fillets side by side instead of stacking them. - The lid is a heat pedal, not a switch. Fully on, the pot climbs. Fully off, it drifts down. A lid set ajar is a genuine control position that lets you hold a temperature the burner cannot hold on its own. This is the same lever that decides whether vegetables sweat or brown, laid out in sweating vs sautéing.
- Move the pan off-center. If your lowest burner setting is still too hot — common on gas — slide the pan half off the ring. It looks like cheating. It is just a smaller flame.
- Adding cold food resets everything. Four fillets straight from the fridge will drop a pot of liquid a long way. Let it come back, then set the heat again — do not chase the temperature while the pan is still recovering.

When you genuinely want a hard boil
Boiling gets treated as the crude setting, the one you use when you have not thought about it. But there are jobs that only a rolling boil does properly.
Recovery. Pasta and vegetables need enough water, boiling hard enough, that dropping food in does not stall the pot. A big pot at a full boil comes back in seconds. A small pot at a gentle simmer never comes back at all, and the food sits in warm water going soft.
Speed, for anything green. Green vegetables lose their color the longer they cook, so the fastest possible trip through the pot is the one that keeps them brightest. A slow simmer gives that dulling reaction all the time it needs. Salted water at a hard boil, then out — that is why the technique exists.
Cooking a vegetable through to the core. Leeks are the case in point. You want them tender the whole way through, not crisp in the middle, and a generous pot of boiling salted water gets you there evenly in about ten minutes. Drain them cut side down so the water trapped between the layers runs out, then dress them while they are still hot — warm vegetables take up a vinaigrette in a way cold ones simply do not.
Salt the water, and salt it properly
Salt in the cooking water seasons food from the inside, which is something you cannot do afterward with a pinch on top. Unsalted boiling water actively pulls flavor out.
There is no useful fixed number here, because salt crystals vary enormously in how much a spoonful weighs — the same problem that makes a cup of flour an unreliable measure, covered in scales vs measuring cups. Taste the water. It should taste seasoned, like a light broth. If it tastes of nothing, it is doing nothing.
Eggs in the shell run on a different clock
An egg still in its shell is protected from the agitation, so this is the one case where boiling water is the right call — the shell takes the beating instead of the egg.
Lower them in on a spoon rather than dropping them. Most cracked eggs are cracked by the landing, not the heat. Start the timer the moment they go in, because the clock is measuring how long heat has been travelling toward the yolk. From fridge-cold large eggs, six to seven minutes gives you a set white and a yolk that still runs.
Then move them straight into cold water, and treat that as part of the cooking rather than an optional tidy-up. An egg comes out of the pot carrying a lot of stored heat, and it goes on cooking in your hand for a couple of minutes — long enough to turn the yolk you wanted into the yolk you did not. Two minutes in cold water stops it and makes them possible to peel.
Poaching in something other than water
Water is the default, not the requirement, and it is usually the least interesting option.
Broth, wine and aromatics. Poach a fillet in a broth you have built — leeks softened in olive oil, a little wine reduced down, saffron, a strip of orange zest — and the liquid does not go down the sink. It goes into the bowl underneath the fish. The technique and the sauce become the same step, which is the whole argument for poaching over almost anything else on a weeknight.
Olive oil. Oil poaching sounds extravagant and is mostly just forgiving. Oil does not boil anywhere near these temperatures, so it cannot suddenly run away from you the way water does at 212°F — it simply sits where you put it. Very little oil actually gets into the fish; what you are buying is a completely stable, completely still cooking medium.
Fixing it while it is still in the pot
- It came up to a boil and you wanted a poach. Take the pot off the heat entirely and add a splash of cold liquid. Do not just turn the dial down — the pan holds too much heat and will keep boiling for a minute you do not have.
- The fish is starting to break up. Stop moving it and stop stirring. Lift each piece out with a slotted spatula supported from underneath, not with tongs, and serve it in a shallow bowl where it does not have to survive a transfer.
- Beans are bursting. Drop the heat and top up with hot water. Cold water shocks the skins and splits more of them.
- The pot will not come back to a boil after you add food. Too little water, too small a pan, or too much food at once. Cook it in two batches rather than waiting it out.
The thing to remember
Look at the surface, not the dial. A still surface with a wisp of steam is a poach. A trembling surface with a thread of bubbles is a simmer. A surface turning over on itself is a boil. Everything else — the pan, the lid, the burner, the size of the pot — is just how you hold the one you want.
Try it on the next piece of white fish you cook. Get the liquid to the point where it is barely moving, slide the fish in, and then genuinely leave it alone — no stirring, no turning, no lifting the lid to check. Eight minutes later you will have a fillet in one piece and a bowl of broth worth eating, and you will never quite trust a bubbling pot with fish in it again.
