Romaine, cherry tomatoes, cucumber, feta and kalamata olives, with sliced grilled chicken laid over the top. Twenty-seven minutes, two generous servings, and the char on the chicken is what turns a bowl of raw crunch into lunch.

Pound the breasts to an even three-quarters of an inch before they go on the heat. A whole breast is nearly twice that at the thick end, and over direct heat the outside blackens long before the center gets anywhere near a safe 165°F. Even thickness is the only thing that makes one temperature true across the whole piece. Then rest it five minutes off the heat before you slice, so the juices stay in the meat rather than running onto the board.

Go easy with the seasoning on the chicken. The feta and the olives have already salted the bowl for you. Shrimp swaps in for a faster cook, and a few pepperoncini add a bright, tangy bite.

Ingredients

  • 2 boneless skinless chicken breasts (about 1 lb)
  • 2 tbsp extra virgin olive oil, divided
  • 1 tsp dried oregano
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup kalamata olives
  • 2 tbsp red wine vinegar

Method

  1. Pound the chicken breasts to an even 3/4 inch.
  2. Rub them with 1 tbsp of the olive oil, oregano.
  3. Grill until they register 165°F (74°C) at the thickest part, 5 to 6 minutes per side.
  4. Rest the chicken 5 minutes; slice it.
  5. Toss the lettuce, tomatoes, cucumber, feta, olives in a bowl.
  6. Drizzle with the vinegar, remaining olive oil; top with the chicken.

Chef's notes

Swap the chicken for shrimp if you want a faster cook, or add pepperoncini for a bright, tangy bite.
