You need one onion diced for a weeknight braise. There’s a food processor in the cupboard. Do you get it out?
Almost everybody’s instinct says yes, because chopping is the boring part and the machine is right there. Almost everybody is wrong: for one onion the knife finishes the whole job — prep, chopping and cleanup — about three minutes sooner. The reason is a cost nobody puts in the comparison.
Food processor vs chopping by hand: count the cleanup
Every comparison of these two counts the chopping and stops there. So the machine looks unbeatable — ten seconds against two minutes. But that’s not the transaction.
Here’s the whole transaction for one onion. These are reasoned typical times rather than a stopwatch comparison — but the order of magnitude is the entire argument, and it doesn’t depend on the exact seconds.

The machine wins the part everyone measures and loses the part nobody does. And it loses it badly, because washing a processor bowl is genuinely unpleasant work — there’s a blade in it, it doesn’t stack, and it takes up most of a dishwasher rack if you go that route.
The threshold is roughly this: the machine starts winning when hand-chopping would take you more than about ten minutes, or when the job is something a knife does badly. Below that, you are lifting an appliance out of a cupboard in order to create dishes.

Worth a moment, because it explains why this framing is hard to find.
Search this question and a large share of the strongest results are published by appliance manufacturers. Every one of them concludes that you should own the appliance, which is the only conclusion available to a company that makes it. That isn’t dishonesty — it’s just the shape of content marketing, and it means the entire “do I need this” question is being answered almost exclusively by people who need the answer to be yes.
You’ll also find some eye-catching statistics floating around about how much time bad prep tools cost the average home cook. I’ve left them out, because I couldn’t trace any of them to a primary source. If a number can’t be followed back to who measured it and how, it isn’t evidence, and repeating it would make this article part of the problem it’s describing.
And to be straight about my own position: this page earns a commission if you buy through it, and it’s about to tell a lot of readers not to.
Where the machine genuinely earns its cleanup
- Volume. Three pounds of vegetables for a big batch of soup base, coleslaw for a crowd, a double batch of anything. Once the pile is large enough, ten seconds of machine time replaces twenty minutes of standing, and the cleanup is unchanged whether you processed one onion or ten.
- Shredding. This is the one where the gap is enormous and underappreciated. Shredding cabbage, carrots or cheese by hand is slow, awkward and hard on your knuckles. A shredding disc can clear a whole cabbage in well under a minute, and the shreds come out more even because the slot in the disc sets the width on every single pass — where the angle and pressure of a hand on a box grater change stroke to stroke.
- Purées and emulsions. Hummus, romesco, pesto, mayonnaise, nut butters. A knife physically cannot do these — it’s not a speed comparison, it’s a different operation.
- Pastry. Cutting cold butter into flour, fast, before the butter warms and softens. Speed is the actual technique here, and hands lose because hands are warm.
- Grinding. Breadcrumbs, ground nuts, spice pastes.
Notice how many of those aren’t chopping at all. That’s the real pattern: a food processor’s best arguments are the jobs a knife can’t do, not the jobs a knife does slowly.
Where the knife wins, and it isn’t only speed
Small quantities. One onion, two carrots, a handful of parsley. The cleanup math never works out.
Anything that needs a uniform dice. This is the one that overturns the usual assumption about the machine. The blade is sharp and it does cut, but what it cuts is whatever happens to be near it. Pieces by the blade get hit over and over and head toward paste, while pieces flung out to the wall of the bowl sit untouched until you stop and scrape them down. You end up with large pieces, small pieces and paste in the same bowl. It’s the opposite of uniform.
That matters because uniformity is what makes food cook evenly. Unevenly cut vegetables give you some pieces burnt and some raw regardless of how carefully you manage the heat, which is the argument laid out in knife skills. So for a soffritto, a stew, anything where the pieces need to finish together, the processor’s output is actively worse than a knife’s — faster, and worse.
Anything where texture is the point. A salsa pulsed in a processor becomes a slurry. Onions for a slow-cooked base turn watery. There’s a reason recipes specify “finely chopped” rather than “processed.”
When you want to see it happening. You can stop a knife at exactly the right moment. A processor goes from too coarse to too fine in about one second, and the only control you have is pulsing and hoping.
The three-way choice nobody frames properly
This is usually presented as a binary — machine or no machine — and that’s why so many people end up with the wrong one. There are three positions, and the middle one is the right answer for more households than either end.

A knife, for essentially everything
Nothing replaces it, nothing has fewer parts, and for the quantities most weeknight cooking involves it’s simply faster once you count the whole job. If your prep feels slow, the fix is far more likely to be a sharp knife and better technique than an appliance — and that’s a cheaper fix too.
A small chopper, for the jobs that are genuinely annoying by hand
Here’s the case that gets skipped. Most of what makes prep tedious isn’t volume — it’s a short list of fiddly small jobs. Mincing garlic. Chopping a bunch of parsley finely. Shallots. A small batch of pesto. Grinding a handful of nuts.
A large processor is absurd for those; you’d be washing a fourteen-cup bowl to mince three cloves. But a small chopper has three parts, sits in a cupboard you can actually reach, and washes in under a minute. For a lot of home cooks this is the machine to own and the large one isn’t.
A full processor, if the cooking actually demands it
The Cuisinart Custom 14-cup (paid link) is the long-standing reference in this category, and the capacity is the point: it’s the size at which volume work, shredding discs and pastry dough all become practical.
Buy it if you batch-cook, bake pastry, shred a lot, or make purées and emulsions regularly. Don’t buy it because chopping is boring. It’s a large, heavy machine, and the honest question isn’t whether it’s capable — the capacity and the disc set are the point — but whether you’ll lift it out often enough to justify the space it takes.
And the manual option, placed honestly
Push-down choppers like the Fullstar vegetable chopper (paid link) sit between the knife and the machine: no power, no motor, and they do produce a genuinely uniform dice, which is more than a processor manages.
They have their own cleanup cost, though, and it’s the part the category tends not to mention. You’re washing a container, a lid and a blade grid, and a grid with food wedged in the squares is fiddlier than a single blade. They also struggle with anything soft or anything that isn’t roughly cube-shaped to begin with. Worth it if uniform dice matters to you and knife skills don’t appeal — not a general-purpose replacement for either of the other two.
The cost that decides it, and it isn’t money
An appliance has three costs. The purchase, the cleanup, and the space — and the third one quietly determines whether you get the first two back.
A full-size processor is large and heavy. On the counter it occupies prime working surface, which is the space you actually need clear to cook well. In a cupboard it’s out of sight and requires lifting, and an appliance that requires lifting gets used a fraction as often as one that doesn’t. That’s the failure mode: not that people buy a bad machine, but that they buy a good machine that lives in a cupboard and never comes out.

Buying order
- A good chef’s knife, kept sharp. Before any machine, and it isn’t close. It’s cheaper than all of them, it never needs plugging in, and it does the widest range of work.
- A small chopper, once you know which small jobs you keep dreading. Buy for a specific annoyance you’ve actually noticed, not in the abstract.
- A full processor, only when you can name the recurring task that needs it — the weekly shredding, the pastry, the batch cooking.
Most people skip straight to step three, and a good share of them end up with a machine they use four times a year.
Matched to how you cook
- Cooking for one or two, most nights. Knife. Maybe a small chopper if garlic is your particular grievance. A full processor will not pay you back.
- Family cooking, moderate volume. Knife plus a small chopper covers almost everything. Revisit the big machine only if you find yourself repeatedly wishing for a shredding disc.
- Batch cooking on a Sunday. This is the genuine case for a full processor — one setup, one cleanup, an enormous amount of prep. The cleanup cost is fixed, so volume is exactly what amortizes it.
- You bake. Pastry alone can justify it.
- Hand or wrist problems. This reverses the whole argument, reasonably. If extended chopping hurts, the cleanup cost is a fair price and the machine is the right call regardless of quantity.
The honest summary
For most weeknight cooking, a sharp knife beats the machine — and I’d rather say that on a page that earns commission on machines than have you buy one that ends up in a cupboard.
The processor’s real arguments are volume, shredding, purées and pastry. If your cooking includes those regularly, buy one and you’ll be glad. If it doesn’t, the money is better spent on a knife you enjoy using, and the time better spent on the ten minutes of technique that makes chopping stop feeling like a chore.
Two places to go from here. Knife skills is the cheapest upgrade available and the one that removes the problem rather than working around it. And if the actual bottleneck is that prep happens at the wrong time rather than too slowly, prepping vegetables ahead and cleaning as you cook between them solve more weeknight friction than any appliance will.
