A Cup of Flour Isn’t a Fixed Amount: Scales vs Measuring Cups

Two people bake the same loaf from the same recipe on the same afternoon. One comes out light and open; the other is dense and a little dry. Neither of them did anything wrong, and neither of them can work out what happened.

What happened is that they measured five cups of flour and one of them used noticeably more flour than the other.

Kitchen scale vs measuring cups: the honest split

The argument you’ll usually find online is one-directional: scales are accurate, cups are not, switch to a scale. That’s about a third of the picture.

The useful version has a line through it:

  • Weigh anything scooped, packed or powdered — flour, sugar, cocoa. This is where cups genuinely fail.
  • Use cups for liquids — water, milk, stock, oil. A cup of water is reliably a cup of water, and a measuring jug is faster than a scale.
  • Use spoons for small amounts — salt, baking powder, spices. Most home scales can’t read these amounts accurately, which almost nobody mentions.
  • And mostly, this is a baking question, not a cooking one.

Why a cup of flour isn’t a fixed amount

A cup measures volume — the space something takes up. That works perfectly for anything that can’t be compressed, and badly for anything that can.

Flour compresses. A cup of it is mostly flour with a significant amount of air distributed through it, and how much air depends entirely on how the cup got filled:

  • Dipping the cup into the bag and sweeping it level packs the flour as the cup pushes through it. Most flour, by a wide margin.
  • Spooning flour into the cup and levelling the top keeps it loose. Noticeably less.
  • A bag that’s been sitting in the cupboard has settled and compacted; one that’s just been sifted or shaken hasn’t.

The range commonly quoted for a cup of all-purpose flour runs from around four ounces to around six. That’s not a rounding difference — at the top of the range you have half again as much flour as at the bottom.

Now scale it. Writing in Slate some years ago, Michael Ruhlman framed the problem this way: a recipe calling for five cups of flour leaves you not knowing whether you have twenty ounces or thirty, which is a difference of most of a pound in the ingredient doing the structural work. That’s the whole argument in one line, and it’s why “add flour until the dough feels right” exists as advice at all: experienced bakers are silently correcting for a measurement that never told them much.

A bread recipe calling for five cups therefore sits somewhere between roughly twenty and thirty ounces of actual flour depending on who’s measuring. That is the entire explanation for the two loaves at the top of this page.

A scale skips the whole problem. Weight is a property of the flour itself, and it doesn’t care how the flour is packed, what shape the container is, or whether the bag has settled.

Where weighing wins outright

  • Flour, and anything else powdered. Cocoa, powdered sugar, cornstarch — all compressible, all subject to the same problem.
  • Brown sugar. Recipes say “packed” precisely because they know volume is unreliable here, and “packed” is doing a lot of unspecified work — one person’s firm press is another’s gentle tap.
  • Anything sticky. Honey, molasses, peanut butter, tahini. Half of it stays in the cup. Weighing it straight into the bowl means none is lost and there’s nothing to wash.
  • Scaling a recipe. Halving three-quarters of a cup is arithmetic and a bad measurement. Halving 180 grams is arithmetic and an exact one.
  • Portioning. Equal-weight rolls, buns and loaves bake evenly. Equal-eyeball ones don’t. The same applies to dividing anything you’ve cooked in bulk, which is half the point of prepping ahead.
  • Repeating a success. This is the real argument. If you weighed it, you can make it again. If you scooped it, you’re starting over each time.

Where cups are actually better

The internet is oddly reluctant to say this part.

Liquids. Water, milk, stock and oil don’t compress, so a cup of them is genuinely a cup every single time. Volume is the right tool, and pouring into a jug is faster than weighing. The one edge case is when you’re already weighing everything else into the same bowl — then adding liquid by weight saves you a vessel.

Small quantities. A teaspoon of baking powder or salt weighs a very small number of grams, and most home scales work in one-gram steps and are unreliable at the bottom of their range. Below roughly five to ten grams, a measuring spoon is more accurate than the scale — the opposite of what the switch-to-a-scale argument implies. This is why serious baking recipes give flour in grams and baking powder in teaspoons in the same breath.

Speed, when precision doesn’t matter. A cup of rice, a cup of stock, a splash of wine. Weighing these is procedure for its own sake.

Where scales let you down

Nobody selling the scale argument mentions any of this, and most of it will catch you eventually.

  • The low-weight floor. As above — a scale that reads in whole grams cannot resolve two grams of yeast in any meaningful way. Precision scales that read to a tenth of a gram exist and are inexpensive, and if you bake with yeast or work with small quantities of anything, that’s a second scale worth having rather than an upgrade to your first.
  • Auto shut-off. Many scales power down after a couple of minutes of inactivity. If that happens mid-recipe with a bowl on the platform, your tare goes with it and you have no way of knowing what’s already in the bowl. And unlike a flat battery, it fails silently — the scale looks fine, it just quietly forgot what was already in the bowl.
  • Batteries. They fail without warning, and a measuring cup has no equivalent failure mode.
  • Surface matters. Scales need a hard, level surface. A cutting board, a folded towel, or a slightly bowed counter will all throw the reading.
  • The bowl hides the display. A wide mixing bowl on a small platform covers the numbers entirely. Some scales have a pull-out or offset display for exactly this reason, which is worth looking for if you mix in wide bowls.

Those five points are the actual buying criteria for a scale, and they’re all more important than the accuracy figure on the box — every scale in the category is accurate enough for flour. What differs is whether it stays on, where the display sits, and how far down the range it can still be trusted.

Using a scale with a recipe written in cups

This is the practical problem the scale evangelists skip entirely, and it’s the one most American cooks actually have. You own a scale. Your recipe says two cups of flour. Now what?

Three options, in order of how much they help.

  1. Check whether the recipe gives weights too. Increasingly they do, often in parentheses. If it does, use them and stop reading this section.
  2. Standardize how you fill the cup, then weigh it once. Spoon flour into the cup and level the top — the loose method, and the one more contemporary recipes are written around, though publishers genuinely differ on this. Put that on the scale and write the number down. Now you have a conversion for that specific flour in that specific kitchen, and you can use the scale from then on.
  3. Use the publisher’s stated equivalent. Many cookbooks and flour brands publish what they mean by a cup. Where one exists, it beats a generic chart, because it tells you what the person who wrote the recipe had in mind.

What I’d avoid is grabbing a random gram-per-cup figure off the internet and treating it as authoritative. The whole point of this article is that the number varies — so a chart that gives you one figure to three significant digits is solving the problem by pretending it doesn’t exist.

Tare is the feature that changes how you cook

If you take one practical thing from this, take this.

Put your mixing bowl on the scale and press tare — it zeroes with the bowl’s weight subtracted. Add your flour. Press tare again. Add the sugar. Again. Add the butter. Everything goes into one bowl, measured cumulatively, and you never touch a measuring cup.

The accuracy is the advertised benefit. The real one is that a full set of dry measuring cups and spoons doesn’t get dirty, which on a baking day is a meaningful pile of washing that simply never happens. That’s the same logic as everything in cleaning as you cook — the best dish is the one you never used.

Baking, not cooking

Worth being straight about the limits of all this, because the scale argument tends to sprawl into territory where it doesn’t apply.

Baking is ratios. The relationship between flour, liquid, fat and leavening determines the structure, and you find out whether you got it right when it comes out of the oven — far too late to fix. Precision is genuinely load-bearing there.

Cooking isn’t like that. You taste as you go, and you adjust. A little more onion, a little less stock, another few minutes — the feedback loop is continuous, and it corrects for imprecision automatically. Nobody weighs the vegetables for a braise, and nobody should.

Which is also why my own books use cups. They’re written for American home cooks, cups are what American kitchens have, and for the kind of cooking they contain that’s the right choice rather than a compromise — a Mediterranean braise does not need a scale, and asking for one would add friction without adding a thing to the plate. Where a recipe genuinely depends on ratio, that’s where weights earn their place.

Whether you need one

If you bake — bread especially — yes — and of everything cheap you could add to a baking setup, it is the one most likely to fix the loaf that keeps coming out dense. If you mostly cook, you can go a lifetime without one and lose nothing.

And if you buy one, buy it on the five criteria above rather than on the accuracy claim: does it stay on, can you see the display under a bowl, how far down does it stay trustworthy, is the platform stable, and how does it handle batteries.
