One pan, a bag of red lentils and the spice drawer, and you have dinner for four in 28 minutes. The lentils collapse into a thick golden stew spiced with cumin and turmeric, with sweet pockets of dried apricot through it and lemon and cilantro over the top.

Hold the apricots back until the halfway mark. By eight minutes the lentils are already breaking apart, and fruit going in at that stage turns tender while keeping its shape. Added at the start it simply melts away, and you lose the sweet bites that make the pot worth eating. Run a spoon along the bottom every so often, because red lentils will stick and scorch as soon as they begin to thicken.

It keeps thickening as it stands, so loosen it with a splash of water if it goes past spoonable. A serving carries just under 10 grams of fiber. Yellow split peas give a firmer texture if you prefer some bite, and a spoonful of yogurt at the table is welcome.

Ingredients

  • 1 1/2 cups dried red lentils, rinsed
  • 2 tbsp extra virgin olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp ground cumin
  • 1 tsp ground turmeric
  • 4 cups vegetable broth
  • 1 tsp salt
  • 1/2 cup dried apricots, chopped
  • 1 tbsp fresh lemon juice
  • Freshly ground black pepper
  • 1/4 cup chopped fresh cilantro

Method

  1. Heat the olive oil in a saucepan over medium heat and cook the onion until translucent, about 4 minutes.
  2. Add the garlic, cumin, and turmeric and cook until fragrant, about 1 minute.
  3. Stir in the lentils, broth, and salt, then bring to a low simmer.
  4. Simmer for 8 minutes, stirring along the bottom now and then so nothing catches.
  5. Add the apricots and continue to simmer until the lentils collapse into a thick, spoonable stew, about 9 minutes more.
  6. Stir in the lemon juice and a few grinds of pepper, loosening the pot with a splash of water if it has gone past thick.
  7. Scatter the cilantro over the top and serve.

Chef's notes

Swap in yellow split peas for a firmer texture, or spoon a little yogurt over each bowl at the table.
