Bitter radicchio and a rich tuna steak want each other, and a hot oven is what brings them together. The radicchio goes in alone for eight minutes, and the steaks are laid on the same hot sheet pan for the six that follow. One pan, 22 minutes, dinner for four.

Heat is what turns radicchio from harsh to sweet. Cut the head through the core into wedges so they hold together instead of falling into loose leaves, and keep each wedge sitting on a cut face rather than tumbling them around the pan. The flat side against hot metal is where the browning happens, and the browning is the point.

Whisk the honey and vinegar while the radicchio roasts and spoon it over everything at the end rather than before, so it stays sharp instead of scorching in a 425°F oven. Endive or thinly sliced fennel works in place of the radicchio, and swordfish cut to the same thickness roasts in the same time.

Ingredients

  • 4 tuna steaks (5 oz each), about 1 inch thick
  • 1 head radicchio, cut through the core into 8 wedges
  • 4 tbsp extra virgin olive oil, divided
  • 3/4 tsp salt, divided
  • Freshly ground black pepper
  • 2 tbsp honey
  • 2 tbsp red wine vinegar
  • 2 tbsp chopped fresh parsley

Method

  1. Heat the oven to 425°F (220°C).
  2. Toss the radicchio wedges with 2 tablespoons of the olive oil, half the salt, and a few grinds of pepper on a sheet pan, keeping each wedge on a cut face.
  3. Roast the radicchio until the edges darken and the wedges soften, about 8 minutes.
  4. Whisk the honey and vinegar with 1 tablespoon of the olive oil in a small bowl.
  5. Rub the tuna steaks with the remaining olive oil and season them with the remaining salt.
  6. Push the radicchio aside, set the steaks on the hot pan, and roast until the center registers 145°F (63°C), about 6 minutes.
  7. Spoon the honey dressing over the tuna and radicchio and scatter the parsley over the top.

Chef's notes

Swap in endive or thinly sliced fennel for the radicchio, or use swordfish steaks cut to the same thickness.
