Sweet lump crab over peppery arugula and thin radishes, with a sharp lemon and Dijon vinaigrette. Fifteen minutes, no cooking at all, four servings at 22.1 grams of protein a portion. This is what to make when the ingredients are good enough that the cooking would only get in the way.

Pick the crab over carefully for shell before it meets anything else. It is the step easiest to skip and the one a guest will remember. Then dress the crab on its own with about a third of the vinaigrette, folding gently so the lumps stay whole, and toss the arugula with the rest at the very last moment. Lemon collapses those leaves within minutes of touching them.

Taste before you add salt, because crab arrives salty already. Claw meat costs a fraction of lump and tastes every bit as good; it shreds more, so fold it more gently still. Shaved fennel in place of the radishes gives sweetness rather than pepper and holds up better if the salad has to wait, and avocado adds the creaminess all that acid is asking for.

Ingredients

  • 1 lb lump crab meat, picked over
  • 1/3 cup extra virgin olive oil
  • 3 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 6 cups arugula
  • 1/2 cup thinly sliced radishes
  • Salt and pepper to taste

Method

  1. Whisk the lemon juice and Dijon mustard together in a small bowl, then pour in the olive oil in a thin steady stream, whisking, until the dressing thickens slightly and stops separating.
  2. Season the dressing with salt and pepper.
  3. Gently fold the crab meat with a third of the dressing in a separate bowl, being careful not to break up the lumps; taste before adding any salt, because crab is already salty.
  4. Toss the arugula and radishes with the remaining dressing just before you serve.
  5. Divide the arugula salad among plates and top with the dressed crab meat.

Chef's notes

Claw meat costs a fraction of what lump does and tastes every bit as good; it shreds more, so fold it even more gently than you would the lumps. Shaved fennel will stand in for the radishes when you want sweetness rather than pepper, and it holds up better if the salad has to wait for you.
