Ingredients

  • 3 cups cooked chickpeas (about two 15-oz cans), drained and rinsed
  • 3 tbsp extra virgin olive oil, divided
  • 1 large fennel bulb, stalks trimmed and core removed, thinly sliced, fronds reserved
  • 1 small red onion, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 1/4 tsp red pepper flakes
  • 3 cups baby spinach
  • Zest and juice of 1 orange
  • Salt and pepper to taste

Method

  1. Heat 2 tablespoons of the olive oil in a large skillet over medium heat.
  2. Add the fennel and onion and cook, stirring occasionally, until softened and lightly caramelized, 10 to 12 minutes.
  3. Stir in the garlic and red pepper flakes and cook until fragrant, about 1 minute.
  4. Add the chickpeas and cook, stirring occasionally, until heated through and lightly golden at the edges, about 5 minutes.
  5. Stir in the spinach in batches, letting each batch wilt before adding the next, about 3 minutes total.
  6. Pour in the orange juice and cook, stirring and scraping, until it has reduced to a glaze that just coats the pan, about 30 seconds.
  7. Remove from the heat and stir in the orange zest.
  8. Season with 1/2 tsp salt and pepper, finish with the remaining olive oil, and scatter with the reserved fennel fronds.

Chef's notes

Swap the fennel for celery if that is easier to find in your kitchen. Scatter toasted almonds on top for a satisfying crunch.
